The Beginning
We farm at 38° North latitude — the precise line that runs through Scotland, Maryland, where the Chesapeake Bay and Potomac River converge. This isn't just a coordinate. It's a location that has defined oyster culture in America for centuries, and one we chose deliberately.
The water here is clean, the tidal flow is consistent, and the mineral composition creates ideal conditions for growing Eastern oysters with a flavor profile that stands apart. We didn't stumble onto this location — we sought it out.

The Operation
Our operation is hands-on by design. We wade into the water, pull cages by hand, and grade every oyster ourselves. That level of direct involvement is what allows us to maintain the quality standards our buyers depend on.
