If you've ordered oysters from multiple farms or distributors, you've probably noticed that size terminology is not standardized across the industry. One farm's "large" is another farm's "standard." A "cocktail" oyster from one region may be the same physical size as a "select" from another. This inconsistency can make sourcing decisions confusing — particularly for buyers who are trying to maintain a consistent product on their menu.

At 38° North, we grade our oysters by shell length and use three grades: Select (3"), Choice (3.5"), and Premium (4"+). Here's what each grade means and how to choose the right one for your operation.

3" Select

Our Select grade is a full-sized, versatile oyster suitable for most raw bar and half-shell applications. At 3 inches, the shell is large enough to present well on a platter but compact enough for easy eating. The meat-to-shell ratio is excellent, and the cup is well-formed. This is a strong choice for high-volume raw bar service where consistency and ease of consumption are priorities.

Select grade also works well in cooked preparations — fried, grilled, or in a stew — where the smaller size means faster, more even cooking.

3.5" Choice

Choice is our most popular grade among restaurant accounts. The additional half-inch of shell length translates to a noticeably fuller cup and more meat — which means a more satisfying eating experience for guests and better perceived value on the plate. The flavor profile is the same as our Select grade (same water, same growing conditions), but the larger size allows the oyster's complexity to come through more fully.

For a mid-range raw bar program, Choice is the grade we recommend. It photographs well, presents beautifully on ice, and delivers a consistent eating experience across a wide range of service styles.

4"+ Premium

Our Premium grade is a statement oyster. At four inches and above, these are the largest oysters we produce — deep-cupped, full of meat, and visually impressive on a platter. Premium grade oysters are best suited for raw bar programs that want to make an impression, or for composed dishes where the oyster is the centerpiece of the plate.

Premium grade oysters are available in more limited quantities than our Select and Choice grades, as they require additional time in the water to reach full size. We recommend contacting us in advance if you need consistent Premium grade volume for a regular program.

How to Choose

The right grade depends on your service style, price point, and guest expectations. As a general rule: Select for high-volume service and cooked preparations; Choice for standard raw bar programs and composed dishes; Premium for special menus, tasting courses, and high-end raw bar presentations.
